Green Peppers stuffed with Haddock


Green peppers stuffed with Haddock, yellow squash and capped with fresh tomato

(Nice lite meal)

Prep time 10 minutes

Cook time 30 minutes

Oven temp 450 degrees fahrenheit

Ingredients

  1. Green peppers
  2. Yellow squash
  3. Fish (Haddock)
  4. Tomato
  5. Sea salt and fresh pepper
  6. Olive oil
  7. Balsamic vinegar


Preheat oven to 450 and grease baking pan (spray oil or olive oil)


Slice green pepper in half and remove stem and seeds

Dice Yellow Squash

Slice tomato

Slice fish into small square strips and season with salt, pepper and olive oil

Place several strips of fish around inside edge of green pepper

Fill center of fish with yellow squash (pile it high)

Place tomato on top of squash

Drizzle olive oil(be generous) over tomato and season with salt and pepper


Place in 450 degree oven for 30 minutes (Tomato will shrivel and fish will turn bright white when done)  Stick knife into fish if not sure


Remove from oven and drizzle Balsamic vinegar over tomatoes

Serve with fresh salad ( I usually use balsamic vinegar and olive oil for dressing. Salt and pepper)
